It is still winter...........therefore I tried out an awesome chili to make the night warmer! This is a chili recipe I found in Midwest Living magazine. It attracted me by the picture and the heading of low-calorie dinner. I tried this recipe out and it is very easy to cook. As long as you can cut up some veggies, then its a matter of throwing things in a pot and just letting it do its thing. :)
So here it is......
Quinoa Harvest Chili (Low-Calorie Recipe)
Ingredients:
1 Medium Onion, chopped
2 tablespoons olive oil
3 to 4 cloves garlic, minced
2 15-ounce cans black beans, rinsed and drained
1 sweet potato, peeled and cubed
1 large zucchini, chopped
3 1/2 cups water
2 cups vegetable broth
1 6-ounce can tomato paste
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano, crushed
1 cup quinoa, rinsed and drained
In a large covered pot, cook onions in hot oil over medium heat until tender, stirring occasionally. Add the garlic and cook for 2 minutes.
Stir in the beans, sweet potato, zucchini, the water, broth, tomato paste, chili powder, cumin and oregano. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes.
Stir in the quinoa. Return to boiling; reduce heat. Simmer, uncovered, for 20 to 25 minutes or until quinoa and potatoes are tender. If desired, top with plain greek yogurt.
This was such a flavorful warm chili that fit perfectly on a cold snowy night. It makes 3 servings(2 1/2 quarts). Nutritional facts per serving: 248 cal, 5 g fat, 808 mg sodium, 44 g carbs, 9 g fiber, 11 g protein
